Altstadt Amber Borracho Beans

INGREDIENTS

  • 1lb Dried Pinto Beans
  • ½lb Bacon
  • ½ tsp Salt
  • ½ tsp Garlic Powder
  • 1 12 oz Can Altstadt Amber
  • 1 Bunch Cilantro, Chopped
  • 1 Bunch Green Onions, Chopped
  • 1 14.5 oz Can Diced Tomatoes
  • 1 Fresh Jalapeño Pepper, Seeded and Chopped

DIRECTIONS

  1. Soak beans in a large container of cool water for 8 hours or overnight.
  2. Cook bacon in a large skillet over medium-high heat until crispy (about 10 minutes), reserving the drippings for later. Chop.
  3. Drain and rinse beans. Transfer to a large pot and cover with several inches of water. Add salt and garlic powder and bring to a boil. Reduce heat to medium-low and add bacon, bacon drippings, Altstadt Amber, cilantro, green onions, tomatoes and jalapeño. Simmer until beans are tender (1½–2 hours).
